Is there a certain word to tender chicken?

Hello all,
I am hoping you can help?
I got a curry from a take away the other day and the sauce was amazing and everything else, except the chicken in the curry was like rubber. I really want to get a curry from them again but how can I ask for chicken thats not like rubber? without saying the last chicken curry was like rubber. IS there a certain name of very tender chicken?

hi blackcloud, the reason the chicken was rubbery was because it was mass produced and the chicken probably didn't have a good or long life. I would let the take away know. chicken should be tender and a bit fiberous after cooking. xx0

If the takeaway is using good chicken, it might just be that you were unlucky. Maybe you were one of the first few orders of the day - or right in the middle of a super-busy patch.
There is really no word for what you're after; you'd need to be having a conversation with them - and the chef - and risk them thinking you're calling them rubbish cooks....
So, try again .... and if it's still not right then find another or go without.
As a rule you "get what you're given", they don't "cook to specific/precise order, depending on the whims and desires of the customer".0 -

Hello Was your curry from a chinese or an indian or was it from somewhere else? There is a process called "velveting" in Chinese cookery involving egg white, cornflour etc (prob best to google exact ingredients). This produces the very tender pieces of chicken you generally get in a Chinese takeaway.
I don't know if it's used in indian cookery as I don't like indian food. But you could try a curry from a Chinese and see if that makes a difference.
