Any cake recipes that use up tinned fruit

My mum cleared out her kitchen cupboards and gave me loafs of tinned fruit.
We don't really like it on its own but wondering about using it in some kind of cupcake recipe to take to work. My colleagues have been especially lovely to me recently so I am trying to take nice things in as a thank you.
Any recipe ideas? I have googled but not found anything. Would prefer something tried and tested!!!

    It depend of course on what fruit you have. You can search on line for recipes or experiment with substitutes.
    Not sure about cupcakes but individual pastry tarts with fruit glazed with jelly , sponge or crumble topping would all suffice.

    I love hummingbird cake (from Hummingbird bakery). I don't have time to post the full recipe,but hope you can find it online. It's only worth making for a crowd, so would suit a workplace treat.

    There's a really quick and easy recipe that I first saw posted on these boards years ago (I think it was BlackSaturn)

    1 tin fruit (drained)
    1 cup SR flour
    1 cup milk
    1/2 cup sugar
    1 egg
    Spice (cinnamon/nutmeg/vanilla, optional depending on fruit)

    Put the drained tinned (or chopped fresh, or dried) fruit in the bottom of an oven dish.

    Beat together all the other ingredients and pour over the fruit.

    Bake for around 20/30 minutes in a hot oven until the batter is cooked and golden.

    Serve hot with cream or custard. Easily serves 4.

    The better drained the fruit the better as too much liquid can make the batter stodgy but this is a generic hot 'pudding' style meal that's great for a cold winter's evening.

    As well as cakes you could do a trifle with the tinned fruit mixed in with the jelly

    Never heard of it but google brought up a Jamie oliver recipe that I can easily adapt to make cupcakes!

    you could also have it with plain yoghurt on (if its in syrup drain it off)
    (but that would be a healthy option for it lol)

    Tinned fruit can be used for savoury dishes too -

    two pork chops, chopped onion, tin of pineapple chunks (including the juice), rosemary.

    Put it all into a casserole and cook for about an hour. Serve with the juices poured over the chops.

    You could drain and puree the fruit to use for cup cakes or alternative to jam layer and cream in a sponge cake. Either add and swirl before baking or add as a layer or to fill a cut-out hole after baking / cooling. Use some of the puree to flavour buttercream or another topping and drizzle the rest to decorate.

    Puree is also nice over ice cream, porridge, muesli, rice pud etc .

    The fruit syrup or juice is also nice added to the liquid to make up a jelly with the fruit added half way through the setting.

    Tins keep for ages, so they'll last.

    Edit: Muffins!, chop and add to a simple, easy muffin recipe.
