What shall I cook tonight?

Options
I don;t have time to go to Tesco, and my cupboards are pretty bare! I can pop to the corner shop though.

I have:
frozen chicken breasts
Bacon
2 BIG courgettes (almost marrows)
1 onion
frozen white fish
sweetcorn
green beans
some very sad and soft potatoes

also storecupboard things like rice pasta etc.

h2b will not eat anything buttery or creamy or with mayo in. I have fed him risotto lots recently but this is all I can think of to make!

Any ideas? Perferably that won't take long as I also need to hoover and tidy up before he arrives at 7pm, and I won;t be home from work till 6.15.

    I'd defrost the chicken and do a stirfry with the courgettes, sweetcorn, onions and green beans.
  • Chicken breasts wrapped in bacon served with mashed potatoes, green beans and courgettes (how about cutting the courgettes into 2-3 inch length pieces and roasting them in the oven with a few herbs and a dab or two of butter or light drizzling of oil?)

    Sounds dleish although h2b won;t eat mash as it involves butter :rolleyes: He could have cous cous though.

    Any ideas for a taginey type dish?? I fancy something spicy.

    How about chicken strips grilled with a light dressing of chopped fried onion and bacon, served with green beans deep fried in a paprika batter? (I have this at TGI Fridays and it's lovely). You could add cous cous to this to bulk it out.

    Chowder or is milk off as well?

    Milk, naff potatoes, sweetcorn, fish, green beans? and onion.

    Follow up with

    Slice the courgettes really thin, saute (OK not butter) with a little bit of onion and herbs (oregano). A bit of tomato goes realy well - one or a bit of paste. Serve with chicken basted with bacon on top?

    On the basis that you might not have time to defrost the chicken, how about bacon, courgette, onion and sweetcorn with pasta? I think that's what I would do in the circs.

    I know this is too late, but I love this kind of challenge!

    I would bake the fish with a topping made of grated potato (spray or brush it with oil so it goes brown), served with a mix of sweetcorn and beans.
