Leftover Brisket

Have some of this leftover from last night, but the only recipes I can find involve sticking it in a sandwich which I don't want to do.
I was thinking rather than sticking it in the freezer where it will never see the light of day again, that I would prepare it into a ready meal for me to eat one day next week.
If I chop it up, cook some rice and peas to go with it, wait for said rice and peas to go cold and mix it all together with some gravy (again, should I wait for this to go cold?) and then freeze. Does this sound like it would work?
Then I can just defrost and heat it in the microwave?

I shred it, then stir fry with onions, peppers, add tinned tomatoes and chilli.
I know a lot of people shred it and stir it into pasta.
Personally I wouldn't like the gravy mixed with rice and peas, but I do sometimes heat up with gravy, fry some crispy onions, cook up one of those half-baked baguettes and make a hot sandwich.0
