175g brown sugar
450ml malt vinegar

Slice cucumbers with mandolin or food processor, mix with some salt and leave overnight to get rid of excess fluid. Rinse and drain well.
Pour vinegar in pan along with pickling spice. Boil for few minutes, leave to cool.
Strain vinegar into large pan, add sugar and heat gently until sugar dissolves.
Add cucumber and simmer for 10 mins or until transparent.
Put drained cucumber in sterilised warm jars.
Boil the liquid till it reduces slightly and then add to jars, covering the cucumbers. Seal
I also add sliced onions to mine having softened them in microwave slightly.
Leave 3 months before eating. Enjoy
