    There are two separate issues.

The payment of the bonus on a week you take holiday

The holiday pay which is calculated based on the statutory definition of a "weeks pay" which may need to include an element for previous bonus payments.

Lately I have noticed that on a couple of occasions I have been £10 down without being off sick.

This is one of the big problems with these kinds of cash incentives. The OP has come to expect the £10 a week in their pay and when they don't get it they feel "de-motivated". So it has the complete opposite effect of what they intended it for because employees will become used to the extra money so don't see it as a bonus when they get it.

There has been plenty of research to show that extra money only motivates employees for a very short period until they get used to it.
