I often make a lentil and sweet potato pate, its a bbcgoodfood website recipe and easy to find. It's great on toast for breakfast or lunch, and the smoked paprika gives it a nice kick.2026 Grocery Spends

Carrot, Lentil and Tomato Soup .
3 medium carrots chopped
1 Large Onion
400g Tomatoes chopped ( can substitute canned )
Tomato Puree - optional
125g Washed Lentils - I tend to use red )
Half a Red Pepper
570ml Stock or Water - I use Marigold Organic Stock Powder
Parsley or Basil - I always have loads of home grown flat leaf French Parsley so use that .
Chop the veg and herbs I dice the veg as I prefer chunkier soups .
Place in a heavy Saucepan or Slow Cooker . Add the Lentils and Tomato Puree ( if used )
Cover with the Stock or Water .
Cook slowly on the hob for an hour and a half '
Or Slow Cooker 4-6 Hours
I add a little Black Pepper to taste , just a few twists of the grinder
Blend if wished .
Serve sprinkled with chopped fresh herbs .
polly .It is better to light a single candle than to curse the darkness.

This soup is amazing, if you like chorizo. I ramped up the smoked paprika a bit too
