Mortgage + proof of income

Hello all,
I have a quick question - my OH and I are looking to buy a property in the next few months, we have a reasonable deposit saved.
I was wondering how lenders assess stable income, I am taking up a new position in the next few weeks and my OH has just secured his first job post-university. Would our switch in jobs affect "stability" and would we be better holding off for a few months before applying for a mortgage? Or does this matter if we both have permanent contracts?
