Having no contract at work

Hello,

This is my first time working in a shop and have no contract.
I was getting confused as I have no experience in there so in needs of some helps.

At first I was introduced casually as the shop was newly open so the owners needed some helps. The rota was given by manager every Friday - and just needs to let manager know the unavailable dates in advance so she could apply. I began to work as 3 days a week, then 4 days a week - which constantly increased.

The problem is that the rules are coming randomly when there is no contract, and it seems to be working just for the benefits of the shop. More pressure is coming as they are now trying to train me to work as a supervisor and rota was given to work like 6 days a week and sometimes 10 hours a day.

I decided not to overwork and I told them that I cannot work next week some time then the manager came back to me saying as I am working full time and started receiving holiday pay (extra basic rate if I work more than 11hrs) - I need to give her 2 weeks notice to have a day off. And to resign the position I need to give them 2 weeks of notice also.

When there is no written agreements what would be the legal requirements actually?
I do not think it is right for employers to make rules randomly when the employer had not informed formally in advance and have mutual agreements.
