Adding spouse (in new job) to mortgage AND remortgage

My wife has just switched from a contracting position to a permanent one (even though this is actually at the same place of work).

My current mortgage provider (Godiva Mortgages but residential) requires 12-month of permanent employment even though it seems to accept contractors too as long as they have 6 months of employment ahead of them.

Do most mortgage providers care so much about employment criteria if this is the 2nd person on the deed? I have been with the same employer for 3 years and that has not changed since I started the mortgage. I am also the main contributor on the mortgage and could potentially afford the mortgage by myself but would still want my wife on the deed as we both want to be owners of my current flat (we may look at being Tenants in Common)

I should also mention that we are also looking to increase the LTV a bit (from 60% to 80%).
