re-heating chicken...

Hi all
I'm just after a bit of advice please.

I was always under the impression that chicken should never be re-heated as it is high risk of food poisoning. Has this general rule changed now as I seem to read a lot on here and other places about batch cooking even foods with chicken.

You can reheat all meat but only once ;)

When I do chicken soup I do it from a carcass and make a big pot of it. It makes a dinner for myself and OH one night, and the rest of the time I re-heat that soup at work for lunches. I also freeze the soup and heat direct from frozen.

Was a bit concerned about doing this to begin with as technically it means you're reheating the chicken twice when you reheat the soup but I've done it loads now with no probs whatsoever after my mum reassured me she has been doing it for years.

But apart from doing soup I would not reheat chicken more than once!

if it wasn't ok to reheat, you'd never find chicken on pizza toppings! :)
  • as long as it is reheated to 63 degrees (piping hot) it will be fine - the heat will kill the food poisoning bacteria
