Completion day. How does it work?

More of an interest question really and specifically about a remortgage.
So how does it work? Obviously a completion date gets set but what happens on that day? What steps are to be done by a solicitor? Like are all the payments set to go and it's just a matter of them making sure or is it a more manual process?
I guess behind this I'm looking at reasons why a remortgage may not complete? What potential issues could there be?
