Living North has teamed up with acclaimed Drighlington Indian restaurant Prashad to offer one lucky reader and a friend the chance to learn the secrets of Indian vegetarian cookery from one of the country’s best chefs.

For more than 20 years, Prashad has been the hub of vegetarian Indian cuisine in west Yorkshire, winning more than 12 major awards in recent years for its stunning Indian cooking. That award-winning pedigree is down to Minal Patel, one of the country’s top Indian chefs and a former student of Gordon Ramsey, who runs the kitchen at Prashad. Minal combines authentic, traditional recipes, passed down through her family over the course of many years, with innovative and creative new ideas she conjures up to create the best Gujarati and North Indian vegetarian food you can find. Prashad is the only two-AA star Indian restaurant in Yorkshire, and visitors come from around the county to taste Minal’s food.

The chance to learn how to cook these award-winning recipes, at her side and in her own restaurant kitchen as part of a regular cookery course, is a rare treat. During the course of the day at Prashad, Minal will demonstrate how to prepare food fit for the finest Indian banquet, talking you through her experience of growing up with food and her life alongside Bobby, her husband, who oversees the restaurant’s front of house. You’ll have the chance to learn how spices are used in Indian cuisine, the flavour combinations that transform everyday food into award-winning, restaurant-quality dishes, and will get to enjoy a special seven-course taster menu for two – all while asking questions of one of the finest minds of Indian food.

The beautifully presented tasting menu is a culinary tour across the breadth and depth of India. Prepared by Minal, you’ll enjoy pattra (marinated leafy parcels) or bhel (puffed rice and tamarind), as well as a range of other delightful courses, before finishing with shrikand, a traditional creamy dessert with pistachio, cardamom and hung yoghurt. As well as the expertise you’ll pick up by watching a chef at the top of her game, you’ll also receive a Prashad hamper worth £150, packed with almost everything you need to start cooking delicious Indian food at home, from Prashad’s best-selling recipe books, to the selection of herbs and spices including Prashad’s own special garam masala, made to a special recipe with 18 herbs and spices.
