Mortgage applicaiton when moving jobs/cities

Hi all,
Hoping someone can help with a query I have.
I'm a first time buyer, relocating from London to Manchester.
I have an approximate 20% deposit, and several job interviews lined up. I am currently in full time employment in London.
I would like to buy as soon as possible rather than get tied into renting for a minimum of 6 months. I do have family I could stay with for a period.
My question is, in order to apply for a mortgage, would it be expected as standard for me to provide 3 months pay slips from my new employer? Or would an offer letter/contract be sufficient? I expect there will be some variance between providers, just wondering if there's a general rule

A little more complex than that.
You need to select a lender carefully.
Some will work off of a contract.
Some will want you to have started the new job.
Some will want you to have been paid at least once.

Plus the lender may insist on evidence that you will actually move there and ask for other proof than just having a job offered. Examples from the past included proof of family living in the new area, written notice to end the rental agreement in London, contacting the new employer for reference.
