Money Saving Cooking for One

I am finding myself spending more on food than I think I need to. Although I try to batch cook, I end up getting lazy with it and picking up breaded chicken breasts from M&S which are lovely but cost £4.00 for two which is fine but I eat a fair bit of chicken so it doesn't last.

On the other hand I love fresh cod which is healthy but that's not cheap either.

I buy ready meals sometimes but not as much as I used to do. I tend to forget to things out of the freezer to thaw out and then I pick something up on my way home from work.

My main diet is chicken, fish, pasta and occasionally mince or corned beef.

How can I make meals stretch more?

    Do your own chicken in bread crumbs. Take a breast, slice it across the middle to open it like a book then batter it flatter. Now I'd make that into two fillets as I'm not a big eater Dip in flour, beaten egg and bread crumbs , 2 bits of chicken for £1

    Get cod and haddock in Lidl I get two nice size bits for £2. They always have a fish on special at £2 a pack. Might not always be cod or haddock so check and stock up when they do, or branch out and try another fish

    leave yourself a note to remind you to get your tea out of the freezer .Put it where you know you'll see it, ,like on the bathroom mirror or on the worktop by the kettle, or on the back of the door that you use to leave in the morning.Then as soon as you see it go to the freezer and get out what you need out to thaw. It'll soon become second nature.
