Hi. Does anyone know where there is a chinese supermarket in the Midlands? I want to buy some of those thin wraps for crispy duck and have had no luck in the supermarkets. I live in Rugby. I have never seen one but they sound fab and would love to check one out.

Hi there
I know of one in NOttingham (Hansons)... but thats probably too far away(my sense of direction is awful)... i do have a recipe for them though....it sounds like a lot of hassel, but it is really easy
MANDARIN PANCAKES-
310g plain flour
2tsp caster sugar
250ml boiling water
1tbs sesame oil- Place flour and sugar in a medium bowl and pour over the boiling water.
- Stir the mixture a few times and then leave until lukewarm
- Knead the mixture on a lightly floured surface to make a smooth doughcover and leave for 30mins
- Take 2 level Tbsp of dough and roll each one into a circle - aprox 3" in diameter
- Lightly brush one of the circles with the sesame oil and place the other circle on top
- roll them to make a thin pancake about 6" in diam
- repeat with the remaining dough to make about 10 "double" pancakes
- heat a frying pan and cook 1 pancake at a time
- when small bubbles appear on the surface, turn it over and cook the other side-pressing the side down with a clean tea-towel
- the pancake should puff up when done - transfer to a plate and when cool enough to handle, peel the 2 halves apart, stack them on a plate and cover at once to prevent drying out

The Wing Yip's in Brum do mail order, I have used them in the past. I'll try and find the link.

Are you looking in the correct place at the supermarket. I have bought them in ASDA and Sainsbury's. They are next to the ready to finish off crispy duck in the meat sections.
I live in London so this may make a difference.0 -
Hi Bongedone,
It's not just London, they're in my local asda too (N Ireland).
If anyone wants to have a go at making them, I found this link with pics. I might give them a go myself next time I need them. Mandarin Pancakes

They are in Waitrose too
I think I might try them -there's a recipe (for the duck not the pancakes) in Nigella's new book. 0 -
Maybe your local take-away would sell you some?0
