Veggie lasagne???

    Zippy.. Can you post the baked bean lasagne recipe please?

    I make mine like Anne Marie, same as anything else just no browning of the quorn mince. I generally add a pinch or 2 of chilli flakes as I think it adds to the flavour and occasionally fresh chives to the home made white sauce if I have any in.

    here you go, the mix freezes really well too (i don't freeze made up as lasagne, just mix)

    2 onions, 2 peppers, 3 cloves garlic (or use lazy if thats all you have)
    Chopped veg (carrots, courgette etc - your choice)
    2 tins beans, 2 tins tomatoes (i use cheapest for both)
    soy sauce & balsamic

    Fry onion, peppers, garlic and veg

    Add 2 tins beans, 2 tins tomatoes, 1-2 tsp chilli flakes, Tbsp soy sauce, tsp balsamic vinegar

    Bring to the boil, then simmer a few hours (or bung in a SC)

    At the end i add balsamic and chilli to taste

    It's an old SW recipe i've adapted over the years. I never considered adding white sauce as we're not big fans. Id rather have lots of cheese as my calories :rotfl:

    I make mine with a mix of veggies and tomatoes, sometimes I use lentils I I have them to hand, sometimes I use my lentil bolognaise mix if I have some spare in the freezer (lentils, grated carrot, finely chopped mushroom, finely sliced onion, tinned tomatoes and marmite). But then I hate meat substitutes.
    Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"

    Hi Zippychick, I use in place of mince - fried finely chopped onions, mushroom and garlic. I think it is a fancy french name I found in a cookbook once.. Layer with tomatoes, basil and peppers.
