Christmas cake without alcohol

Hi Everyone

I was contemplating making a christmas cake with the marzipan and icing but as a family member is unable to have alcohol in anything, is it still possible to make and for it to be moist :confused: .

Bearing in mind that I have never made one before any helpful tips/suggestions/recipes would be most welcome. :D

    I used to work in a shop that made and decorated wedding cakes. it is certainly possible not to used booze in a fruit cake

    Instead of soaking the fruit in alcohol use fresh orange. You will only need a few table spoons full (booze is only used for flavour more than anything)

    To bond the marzipan to the cake use apricot jam warmed and melted and then to bong the roll out icing to the marzipan just use a small amount of water on a pastry brush....

    the best thing to do is put the marzipan on one day and then wait a few before putting the icing on.

    And another tip.......polish the marzipan with your hand till it has a shine to it (make sure that your hands aren't too hot) This will make the icing look more smoother with no lumps or bumps
