Beef, beef, glorious beef - recipes?

We've been doing up our kitchen for what feels like an eternity (end of May), consequently, whilst not resorting to ready meals or takeouts (too often
).... I, equally haven't had the facilities to do any batch cooking until now, the cooker got connected on Saturday ... tomorrow is the day for extreme cooking.
Tomorrow we are getting a delivery of 8lbs mince, 4lbs braising steak, 2lbs extra rump (not to mention steaks and joints which'll just go straight in to the freezer) ..... I've been to the supermarket and I've stocked up with loads of veg.
Now, I'm trying to formulate a plan as to what to do with it all, so far, I've come up with:
Bolognaise by the bucketload
Chilli - ditto
Lasagne
Cottage Pie
"mince and tatties"
Meatballs
Burgers
Boeuf Bourgignon
The rump, I'm going to cut in to strips for future fajitas and beef stroganoff.
Any other ideas as to what I can do with it all?
Apart from that, I have gallons of soup to make (leek & potato, carrot & coriander, curried parsnip)
Then there's colcannon to prepare.
Of course, veg stock at the end ....
In the middle I've also been given a box load of cooking apples, what is the best way of preparing these for future crumbles / pies ?
Today I made 6 loaves of bread ... I feel life returning to normal
Questions:
Can I make cauliflower cheese and freeze it? Or will it go mushy?
Can I make quiche and freeze it? What type of pastry should I make?
If I make a steak & ale pie, again what type of pastry? Shortcrust? (I've bought lard, LOL).
Oh, I'm so sadly excited by the prospect .... it's DH's birthday tomorrow and he's been commandeered for the day to peel, LOL ... I have promised to bake him a coffee & walnut cake, and I've promised DD (aged 3) that yes, indeed we can make biscuits ....
