UKPCS Fine of £100 after appeal date passed

I received a parking charge notice after leaving the site for half an hour, on return I used one of the shops on site and then returned to my car to find the notice. I have kept the receipt for the shop used on site.
I haven't had any contact with UKPCS however they have sent me a letter saying the charge has increased to £100 as a result of non payment.
I have contacted the landowners to try to resolve the issue but to no avail.
What are my options? I am swaying towards not paying just on principle as the amount is a scandalous for a car park that hardly gets used at the time I was parked.
What are the chances of it going to civil court? And if so what are my chances of winning? What costs will I be looking at if losing? I ask all of these questions to calculate the risk of not paying the fines.
Any help would be much appreciated.

and its actually UKCPS (Leeds)
check the BMPA zendesk for the odds of civil court action
yes they might issue an MCOL if they think they can win
a typical loss is between £160 and £250 for one incident
there is no "fine" , its an INVOICE (a parking charge notice , or PCN for short)
your options are twofold
pay , or IGNORE (but do not ignore any LBC or an MCOL)0 -
The charge is a scam, if they were to take you to court they would struggle, so do not pay. They have to prove that they tried to mitigate their losses, if there were any losses.You never know how far you can go until you go too far.0

Update on parking charge**
Hello, I have managed to get my parking charge cancelled and I thought it may be of use to post my method on here for future victims of these private parking companies.
I contacted a retailer (farmfoods) that operate on the car park I received the charge from. I had actually used their shop on the day in question and notified them of this.
They then asked for the following details:
PCN number
Car Registration
Time of issue
Date of issue
Transaction number (on the receipt)
Once I sent this information to farmfoods one of their customer service team had it cancelled within a matter of days.
Small success towards the war against these bullies.

Farmfoods have been known to cancel PCNs before...nice one!PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
