I part boil the potatoes, drain away the water then shake them about in the pan a bit so they get slightly dented and a bit bashed. Then I shove them in the oven and cook them in hot meat dripping.
I do this too, but I cut slits in them before putting them in the oven, it makes sure the outside is crispy, but the inside nice & fluffy.

Don't forget to have your oven really hot and put your fat or oil in until it makes spitting or crackling noises, then put in your parboiled potatoes, give them a spoon over of the fat or oil and leave to cook.
