Mortgage and tronc system

I am starting the process of applying for a mortgage (I am at a very, very early stage), but there is something that is troubling me.
I work in IT, the company I work for is in the hospitality business. Basically, my annual salary is 30K, however part of this is paid by the Tronc system. That is, my net salary (what I get after I pay taxes on the 30K) remains the same, but the company pays me less (I presume this is because service charges or tips are tax-free, or there's no National Insurance to pay).
My net salary is guaranteed, it does not change depending on how much service charge the company makes, but my gross salary can actually change, if it is paid more (or less) by tronc than the 'normal' wage.
You probably know where this is going: will this be a problem when I apply for a mortgage? Can I simply say that my salary is £30K before tax, since my net salary reflects that figure, even though the 'real', taxable amount might be less?

If your contractual salary is £30k then that's what you should state on the application.
Given that the Tronc system is designed to reward people (as opposed to subsidising employers). Sounds as if your employers scheme is sailing close to the wind.0 -
My contract says £30k, the problem is that the gross pay on my payslip does not reflect that (but the net pay does).
Unfortunately it's quite obvious that the Tronc system in this company is not meant to reward employees, rather to make the company pay employees less.0
