I bought a loin of pork yesterday which had a nice piece of fat on it. My mum always manages to get a really good crackling on it but mine is usually a bit under par so I looked online yesterday and followed some tips.

Traditionally bred pork has a thicker layer of fat under the skin, so makes the best crackling ;) It renders down on cooking, so you can skim it off before serving.

I'll add this to the existing thread to keep ideas together.
