Uses for fresh ginger

Stem ginger in a liquid sugary syrup is lovely chopped up and added to a rhubarb mixture. Don't have a recipe for it but am sure Google will be able to find one. (Reminds me of my late mother-I-law who admitted she was no cook when she first got married and ordered a pound of ground pepper (which is a lot of pepper!)
added later: Just done a check on Google. This looks like the way to go !
