Thanks for starting the thread wanttobese - I miss the meal planning thread :)

We have a glamping holiday planned for 5 nights midweek so it's not going to be a usual week for me.

I freeze my first 2 dinner basics when camping, usually a steak for the first night and a ready cooked bolognaise, curry or chilli for the second. By the time we have travelled, set up camp etc the meat is defrosted for the first night, the 2nd night's meal defrosts slower in the cool box for a quick dinner.

I usually take a tin of haggis with me and serve it with bonfire cooked baked tatties and a tin foil parcel of veggies. However, I often find local produce on trips out or we eat out. Eggs also star highly.

    Until Wednesday I have:
BBQ spare ribs, sweet corn, salad and new potatoes
Salmon with new potato, broad beans, lardons and samphire

I'll do a bit of batch cooking tomorrow for the freezer and to take away. I love getting my small camping kitchen things together and can boast that I have a 2 ring gas stove with a mini grill on it! I also pack a cast iron lidded pot for cooking on a camp fire.

    Have a good week everyone.

Those who say "salad" .... how come you're not forced to continue eating that for the next 3-4 days to get through it?

What manner of magical salad is eaten once and disappears?

PN salad is pretty much a constant, daily food for me. If it's not for brunch, lunch or dinner its there for snacking.

Salad can be many things, its a great dish of imagination and using up. More importantly it provides loads of nutrients and at its base are fresh veggies. You can add anything on top of that, it really is that versatile.

I hoover up fresh salad ingredients and whatever is hanging around fresh-wise needing used up, I invent something good. Try it ;)

I appreciate that CFO makes it trickier and not something you may fancy but maybe worth looking at it latterly and how you can combine some of your stocks of food differently. Then again that may not appeal! x

If there is just me and I fancy salad I buy one of the bowls of ready made salads from aldi, it's better than buying a massive cucumber, loads of tomatoes and a load of lettuce that could go to waste I think they are about 80p, I love it with a potato salad made with tinned potatoes mixed with a hard boiled egg cut into chunks.

M : smoked haddock, spinach, baby potatoes, poached eggs, cheese on top
T : salad, tinned tuna, egg. Husband will have chicken leftover from Sunday
W : mash, steamed veg, lamb/ vege pie
Th : chilli and rice, guacamole made from frozen avocados.
F : fishcakes and tinned tomatoes.
