Hi,
I recently tried a chocolate version of the banana skin cake shown on 'love food hate waste' but subbed some cocoa for some of the flour, and used gluten-free flour as my partner is coeliac.
All my family loved it!
Remarkably banana-y for something without actual banana in it. And a great way to use an otherwise wasted item.
