Hiya!
About once every 2 months myself and my OH walk across Hyde Park and go to the quiet Starbucks on the corner for a coffee... and i'm in love with their skinny peach and raspberry muffins. Does anyone have a relatively healthy (am on a diet!) recipe that would I could adapt to make similiar?

Can't give you an exact recipe, but as I recall when I worked for Starbucks the low-fat muffins had yogurt or buttermilk as a key ingredient, I think this keeps them moist and tender without so much fat. HTH!2015 comp wins - £370.25

Have found this recipe... think it's worth a shot?

INGREDIENTS- 250 g all-purpose flour
- 200 g white sugar
- 5 g baking soda
- 3 g baking powder
- 224 g blueberry flavored yogurt
- 1 egg
- 5 ml vanilla extract
- 55 g butter, melted
- 290 g blueberries

Just an update - the above recipe worked out very moist and delicious. USed 40g of butter, canderel instead of sugar and tinned peaches / raspberry yoghurt. Wasn't quite fruity enough for me, so next time am giong to double the vanilla extract and add more fruit (I imagine blueberries would be really delicious). x0

be careful about adding too much more fruit, as the batter may then not cook properly and you'll end up with raw dough around clumps of fruit. If you want more fruit, you could always eat it on the side??
Using a sugar substitute isn't a good idea as your body still reacts like you've eaten sugar - your insulin levels rise because your body says 'got sugar here' and then it falls again, giving you a sugar rush followed by the sugar low. Then you want more sugar/substitute. Just use less sugar instead - up to 25% can be deleted before you'll notice any change in the recipe in taste or texture. Even diabetics are now told to stay away from fale sugars and special dibetic foods.0 -
the muffins sound amazing and I have also been wondering how to replicate their skinny carrot cake, it is full of fruit and absolutely YUM!

oooh can anyone tell me the recipe for starbucks granola bar - even though they changed it about a year ago and its not quite as nice - I still love it. I did do a search at one time for the recipe but don't think anything useful came up.Never let your sucesses go to your head and never let your failures go to your heart.:beer:0
