Hi,
Does anyone know how easy it is to change lender after a mortgage in principle that was done as a hard credit check? Do I have to, or should I, stick with the same lender?

It is fine, however too many credit checks can cause problems.
Unfortunately there is no exact number, it is different for everyone. If you have credit commitments and have kept on top of them then 2 credit checks should not be a problem.
