All the ones I've seen have a plastic lid / window / filter.

Perhaps the idea isn't to avoid all plastics, just to avoid any plastic that's in contact with the water being boiled? An actual, completely plastic-free electric kettle sound impossible as there is going to be a plastic insulated cable and plug.

That's correct - just no plastic in contact with the water

There's loads of stainless steel kettles without plastic water level windows on the Argo5 website ... painted & bare metal ....

You could consider buying a vintage kettle on ebay. I got a lovely as-new 1970s Dimplex kettle in chromed copper for £6.50 incl delivery. Replacement elements for them are still available too.
