I've bought some vanilla pods and want to make some vanilla sugar - the internet is awash with recipes and opinions and now I'm confused.
My nan just used to put the pods in jam jars filled with sugar and rotate and replenish them so that there was always one that was ready to use.
Some methods include scraping the beans and/or the pods and combining them with the sugar in a food processor.
So, how do you do yours?

I have always used 'spent' pods i.e. If I have made Icecream or custard, using the seeds, then I put the split pods in a jar and 3/4 filled with sugar, enough to cover pod - shake regularly.

Your Nan's method is right.
I also split some and cover with vodka, shake when I remember and 6-8 weeks later you have vanilla extract (leave longer if you can).0 -
I love anything vanilla and often thought of trying this myself, however I am not sure what I would use the sugar for

As an ingredient in baking, to shake over freshly baked biscuits, cakes etc, adding to coffee...deeeeeeee-licious.

I have two sugar containers - granulated left plain. Caster with a vanilla pod in. Other sugars e.g soft light brown sugar left plain.2025 Fashion on a ration 0/66 coupons
