Dealing with Capquest by mail/forcing them to play fair...

Hello everyone- this is my first post and I could really use some clear and knowledgeable help! I will try and be as precise as I can:
1) Capquest (debt collectors) is after me for £7000, and I am worried as a result of what I have read on this and other sites, about the tactics they might employ and the fact they are- more or less- a bunch of bullying cowboys.
2) On September 19th I fired off a letter saying that 'I do not acknowledge any debt to you' and asking for them to produce my credit agreement etc. This letter was of a fairly standard type and I found it either on here somewhere (sorry- can't remember exactly where) or on a similar watchdog-type site.
3) I recall reading that they have either 12 or 14 days to produce the necessary documentation. It's after this point, however, that I'm unsure of how to proceed.
4) They wrote back to me a couple of days ago (September 23rd) acknowledging receipt of my letter and saying they have suspended action on my account for 28 days whilst they dig up the necessary paperwork.
5) Obviously, this is their standard stalling tactic so my question is, what do I do next? When do I next write to them (if at all) and what do I say? I know other letters need to be written at some point but cannot find suitable templates or explicit advice! Any help you can give me would be very gratefully received. I want to exercise all my rights in this matter and make Capquest behave according to the letter of the law. I am not prepared to be bullied! Thx, Ben
