Which mortage would you suggest?

Just got an offer accepted on a house for £116000
We have £23k from sale of flat but due to needed to pay buying selling fees and a couple of overdrafts off and the house needing a fair amount of work we can put down £6k as a deposit so need a 95%mortgage.
so need a mortgage of £110k we earn 32k(20k me 12k fiance) I have no credit problems that I know of(never missed been late on payments for anything in the 3 years I've had mortgage) he has never had any kind of credit except a littlewoods catalogue and a basic debit card bank account which he has gone into unauthorised overdraft by £10 twice in last year.
We can afford up to £600 a month on interest only(we could go higher but we know at £600 we won't be struggling at all) we want interest only as are going to save the repayment part ourselves as this gives us more flexibility to put moretowards it when we have more money and less when we need the money forother things.
Preferably fixed rate but not too bothered about termas longas we know the payments for next couple of years(I'm currently doing accountancy training so know in a few years will be bringing in more income) mortgage over 40 years.
