Remortgaging to pay back parents

So, my girlfriend'a parents have kindly given her a hefty deposit towards a house, enough so that she can get a mortgage with the income that she has.

However, since buying it the implication has been that my girlfriend and I should remortgage eventually. This would be great, as then we can jointly own the property. However, my dilemma is when to do it. I would really like to settle into the area first and I don't actually have a job yet as I am doing my Masters. I am hoping it all works out but at the moment I'm feeling very pressured by my girlfriend in particular to commit to remortgage the property as soon as I get a job.

I am worried in case the area isn't for me and I don't want to rush into it and get a bad rate on a mortgage simply because we are desperate. Am I right to be concerned?
