Dinner tastes nasty. How to save it from the bin?

I've cooked a beef stifado in the slow cooker for the first time and it tastes sharp and not at all pleasant. Any suggestions on how to make it better?

It has red wine, red wine vinegar, tinned tomatoes and tomato puree in it - all sharp flavours and I should really have guessed how it was going to turn out. It gets great reviews online for it's authenticity, but that's not much consolation right now.

I've added a level tablespoon of brown sugar, but it hasn't helped much.

Edit - this may be the wrong place for this question

  • Perhaps a tad more sugar or a sweet spice like cinnamon.

Sounds counterintuitive but a squeeze of lemon juice can help reduce the acid flavour - no idea why

When I made a tomato soup that had a really acidic taste (first time I made it) I used sugar to make it edible, I think I used about 3 table spoons in all and reheated the soup dissolving a little at a time untill it was palatable. Seemed a bit excessive at the time but rescued the soup from going down the sink.

Is the mixture the right consistency? I would try coking it on a low heat and maybe the flavours will infuse? Make up some cornflour( 2 teasoonfuls with a little milk and that will thicken it. HTH.

Adding carbohydrates can reduce the flavours .
Potato is good in things like casseroles and stews when you want to deaden the taste down a bit (or remove overly saltiness ). You can fish them out before you serve.
  • Sugar will take away the sharpness.
