Look on the old-style boards for good cooking, batch baking, simple living recipes and tips. This is satisfying and healthy for you, your family, your budget.
Do you have any handcraft skills? Sorting out clothing is easy from cs sources.
Hot water bottles are comforting and soothing. I'd never be without mine. Do you take Thermoses/fruit/healthy snacks out with you on daily walks?
I hope you have a local library you can visit. Scour their noticeboards too.

The first thing is that you need to get solvent. It sounds as though you're waiting for a miracle to happen so you don't need to think about it. Instead, why don't you work out 2 plans, one for living in the situation you're in now and one for if/when your husband gets a job.
Can you not sell the car and use the proceeds to pay off the finance? Once your husband is back in work and you're in a better position financially you can get another one. I wouldn't bother messing around with SORN. You would end up paying for a garage or offroad space and you can't afford it.
All the advice already given re. the new baby is good.
