Just switch off your phone when you are on holiday/sick/etc. You can always get another phone for personal use - just don't give the number to anyone at work!

I looks as if you micro-manage too much, so the staff are trained to ask you about every little thing.

From your list of interruptions, the only one I would deal with whilst on leave/sick is the one from your boss - I'd ping that onto whoever's covering in your absence.

Who's in charge when you're not there? That person needs more training, and they need to be given a suitable degree of freedom to learn to manage without checking in with you for every decision.
