Peppermint Creams - Anyone remember?

Hi all

I am in the middle of getting a hamper together for my sister's 30th. So far I have 29 pressies that I have been buying over the last few months.

My last pressie I would love to be a box of peppermint creams. I remember making these with my sister when we were younger. They were green and pepperminty.

Any ideas/receipes - anyone remember them even?

    There are quite a few recipes around but this one looks like the one I remember from childhood. Mother always made them white whereas I thought they should be green. I used to make them myself to her recipe when I had a young family.

  • I did a lot of experimenting last christmas with peppermint creams - the recipe I ended up with is a bit of a mix of several, but if you want to give it a go (would be interesting to see if it's really ok, or it's just my family with odd taste buds, lol) -

    half a pound of icing sugar
    2-3 tablespoons of condensed milk (the 'light' version seems to work better - don't ask me why)
    2 teaspoons lemon juice
    1 teaspoon peppermint essence
    green food colouring


    Sieve the icing sugar, and add the condensed milk gradually - it's easier to 'wet' a dry mix than to 'dry' a wet mix - as I soon found out.

    Once mixed, add the juice, essence and colour (remember they'll also make the mix wetter), and knead to a paste.

    Coat the work surface with icing sugar, roll paste into a sausage, cut into pieces, form balls and place on tray - the paste is easier to work with if cool, so fling open a window/door, and try not to do it at a time you have the oven on.

  • i make these all the time i love them

    am afraid i dont go by measurements i just do it by guessing but i use

    1x egg white
    a few drops of peppermint ess
    and icing sugar (quite a lot about 10 oz at guess but depends onthe egg size)
    food colouring (your choice of colour) i do 1/2 white and the other 1/2 green


    lightly beat the egg white, add the peppermint ess, then slowly add the icing sugar. when it starts to get stiff and hard to mix with a fork then knead in with your hands and till it is hard enough to mould and or cut out in to shapes once rolled out.

    This is such a quick and each recipe and i hope you enjoy.

    When our children were at home we spent each monday night in December before christmas making christmas treats. These were then put into the freezer and eaten during the holidays. Peppermint creams were a favourite. We made them dried them then we melted a small ammount of chocolate, dipped a fork in and flicked it across the peppermints (flick in same direction) then leave to set. Part of the fun was scraping up the bits of chocolate off the work surface. Choc cake, cheesecake, white, milk and dark chocolate truffles, date slice, chocolate mosaic for sweets and desserts, plus others. Chicken in a bun, lamb and apricot meatballs plus others. No wonder I have to go to S/World!!
