Bland Risotto.

I made a butternut squash risotto yesterday. I had one recently in a Brewers Fayre and it was delish, probably full of butter. I made a weightwatchers one (currently trying to slim) and despite following the recipe it lacked something.
It was basically these ing. butternut s. risotto rice, wine, sage, onion and olive oil. Can anyone suggest some suitable herbs or spices that would give it a bit of oomph??
I have searched the threads but they are so long and was hoping for a quick reply. Sorry mods if you have to move my thread.:o

It's a very simple thing but salt and pepper are usually the biggest things missing when food is bland... restaurants add plenty!
To give butternut squash a lift though, freshly grated nutmeg is fab. If you get the quantities right (trial and error) then it doesn't really add a nutmeg taste but just lifts the butternut flavour. I was recommended this by a Chef at the Ideal Home Show and use it on my roast butternut too xx0 -
grated parmesan ans a little bit of salt and pepper is what I put on mine and it actually makes a difference.:pSealed Pot Challenge 2012 #1502:)

Good chicken stock
Brewer's Fayre probably use cubes full of MSG-if they make it in the kitchen themselves and don't get it off a Brake Brothers truck.

i would say basically seasoning and parmesan are whats missing.
unfortunatly your slimming so most likely you dropped the parmesan.
dont just season at the end.
as you cook the rice and shallots in butter(oil in your case) then season it
make sure you use a good flavoursome stock
learning to fully season food takes time and practise0 -
Garlic? Hubby makes a mean mushroom risotto and adds lots of garlic!0

If you just used water to make the risotto try instead dissolving a veggie stock cube in boiling water before adding that bit by bit into the risotto...0
