I find that books vary too much, e.g. some have recipes with loads of ingredients, and some have simpler recipes. IMHO you're better off going to a library and borrowing a number of books until you find the one you want.
BTW: I find that even though Nigel Slater isn't vegetarian, that the proportion of his recipes that are suitable for vegetarians or vegans are simple, but work well. IMHO, if you get two or three recipes from a book that are very useful, that alone justifies the price of the book.
I have loads of cookbooks. But there's none of them that I can wholeheartedly recommend. Each have a few recipes that are really useful, but a lot that ... aren't.0 -

Have a look in the library. Our library has a huge selection off all types of cookery books. This will enable you to check out some of recipes from different books before committing yourself to buying a book yourself.0

Leiths do a really well written vegetarian cook book. It's a bit of a Bible and worth it's weight if you are looking for a wide range of recipes.0

I received the Meat free Monday book by Paul McCartney for Christmas. (I'd been searching for one too and that had good reviews so put it on my wishlist!)
Honestly, they pack in so many recipes. The downside is alot don't have pictures and are just in a block of text (I really prefer bullet point recipes to follow) but I think it is worth it to compromise on that as the amount of recipes that I would like to try is significantly more than other books I have seen.
(I've not actually made any yet as I've been too lazy:o )
