I've just heard on the radio about a chef who is cooking the latest in posh nosh, squirrel. I missed the first bit of the conversation but managed to hear this bit. It tastes a bit like grouse but sweeter and can smell a bit. To cook, treat it similar to rabbit. Braise the legs very slowly and use the meat along with liver and kidney to make a pie. Roast the rest. Serve with redcurrant gravy.
Only use gray squirrel and you need one per person.
I won't be trying it, we don't like game apart from rabbit but we have squirrels in the garden if anyone has a gun.

Yes, the red squirrel is protected and you can be fined for harming/killing one. The grey squirrel, however, is classed as a common pest in many areas."An Ye Harm None, Do What Ye Will"

I hope this doesnt spark a craze for netting squirrels! although it might put them off destroying the bird feeders!!
I remember a few years ago there was a craze for pidgeon pie - the population of trafalger square suddenly massively decreased, eventually someone caught on to this restraunt owner who was carting them away in the night for his kitchen! You dont get more authentic London cuisine than a trafalger pidgeon!I've made my debts bite-size too depressing to look at all at once so am handling them one at a time - first up Graduate Loan £1720 paid off! only £280 to go!!!

the guy also said there wasn't much meat on it so he had to use the whole animal, hence why the liver etc in the pie....the guy eating it I think from memory stomached a mouthful of the pie!!!!
Red squirrels are protected and VERY rare....don't kill them!
