How to make pickled red cabbage that kebab shops use?

Just wondering if anyone knows or maybe someone works or has worked in a chippy or a kebab shop who knows how they make that nice pickled red cabbage. Ive googled recipes and tried everyone of them but none of them turn out right.

So wondering if anyone happens to know?

Try this recipe, as close as you will get, however most Kebab shops use on recipe or buy in so you may never perfect what you get from your local shop.
