Cooking a goose

Never even tasted goose before let alone cooked one. Just thought I'd try one this year as they were so cheap in lidls
I've googled and some say joint it and start the legs off first, others just cook whole. Some say rare, some say well done
So any seasoned goose eaters, want to share your tried and tested way?

Most important thing is to remove the clumps of fat inside the bird before you start - freeze for goose fat roast spuds another day
Then check you can get it into the oven (we had to joint it one year).
Roast it on a rack or trivet - there will be lots more fat to come out of the bird for you to put your roasties in.

To keep the fat, pierce the breast in a few places, put it on a rack - upside down - when you start to roast it. You'll find that a lot of fat will come out and can be poured into something to keep for roasties etc! Then turn the bird right side up to finish cooking - I don't put on salt, pepper etc until this stage.
There are lots of guides to timing online, since I don't know what type of oven you have I'll not suggest any timings (but in my oven it is about ½ hour upside down before turning.0 -
I love goose, and second all of the above. I roast breast down - I think it keeps the breast meat moist, and I think jointing the bird before cooking just causes more problems.
I make apple, sage & onion stuffing, and serve apple sauce.0 -
Be ready for a strong smell....and a dirty oven.....but it's so worth it.0

Jamie Oliver was cooking one on my Tele the other day, long and slow directly on the oven shelf with his roast potatoes in a big tin underneath.
When the goose was cooked he took the legs off and the meat just fell off the bone which he shredded and it looked like pulled pork, he then pulled the breast off in one big piece from each side and sliced it.
It looked quite impressive.
