Anyone a recipe for vegetarian shortcrust pastry

Hi I want to make a batch of vegetarian mince pies but, short of using all hard margarine, I have no idea what to use and in what quantities. Can anyone offer me a recipe?

My normal shortcrust pastry recipe would be: 225g plain flour, 60g Stork hard margarine, 40g lard. I mix up three or four batches at once and freeze and use as required

    Not tried, but there was a thread on here just the other day on mice pies, the pastry used Trex, which is hard veg fat, worth a search perhaps?

  • There is a thread here somewhere called The best mince pies in the world, and they are made with Trex which, as has been said, is a vegetable fat.

    I make pastry with 5 oz flour to 2 oz butter, a smidge of either salt or sugar depending on whether it's for savoury or sweet goods, and enough tap water to bind. As long as you keep the flour to butter ratio at 5:2, you should be able to make whatever quantity you need.

    The recipe here: https://realfood.tesco.com/recipes/classic-mince-pies.html was very nice when I tried it last week. I don't think I'd ever used icing sugar in pastry before but it was lovely, plus quick to make.

    I shall also give it a try next time I need sweet pastry (99% of the pastry I make is for savoury dishes). I have some icing sugar that needs to be used up out of the way, this would be a good use of it.
