pastuerising at home?

Hello all :)
Just wondering if someone can help. I have a bit of a weak spot for the passion fruit and mango innocent smoothies (especially now with the hint of lime:rolleyes:)

Thing is, as they say themselves, theres nothing to it but fruit, and it gives you the quantities on the label.

So I thought I would like to try to make some (as its really quite pricey at £1.82 for a small bottle) the only part I cannot do is pasteurising it.

Am I right in thinking it is just a slow boil? Killing off the germs and then pouring it into a sterilised bottle?

    Why not just divide it into individual portions then freeze them? Or I'm sure if you made enough for a few days it would keep in the fridge ok.

    Sorry I meant to say, I tried making it using the same amounts, and it just wasn't the same. It was kind of thinner but the taste was completely different and just not as nice.

    The only difference I can tell from the label is pasteruising. So I thought if I could do that, it should make it the same.

    Could I just try boiling it?!

  • :) I don't think pastuerising is the missing element tastewise -I should think that it is more to do with the variety and ripeness of the fruit tthat Innocent use.

    Mangos come in several varieties and vary considerably in texture, sweetness and flavour. Try different kinds until you hit on the right one.

  • no, pasteurization can't be done at home. you can freeze the smoothie once you've made it. Why any smoothie you buy will taste different is becaise of the ripeness and variety of fruit used. Nothing to do with pasteurization. If you tried to 'slowly boil' it you'd lose all the vitamins etc.

    ok thanks, I guess pasteurisation is purely from a storage point then.

    Time to experiment with ripeness then :D

    did anyone see the One show with the subject of acid in smoothies? The fruit acid is stronger than the acid in cola so swill with water to protect your teeth.
