Waitrose duck and waffle stuffing

I have seen Waitrose advertise duck and waffle stuffing and I really fancy it for Christmas. http://www.waitrose.com/shop/DisplayProductFlyout?productId=524455
I thought I could make it myself, but it is not in the shop yet so cannot look at the ingredients.
Does anyone have any idea what could be in it apart from duck and waffles (apart from the sour cherries)?
I am assuming the sour cherries are in as the waffle would be quite sweet.
I was going to slow roast some duck and shred it (keeping the duck fat of course for potatoes) but was unsure whether to use sausage meat to hold it together.
As well as this, where would I get sour cherries.
I thought I could make it myself, but it is not in the shop yet so cannot look at the ingredients.

Sour cherries you buy in the cake ingredient aisle , they come dried
What I would do, is soak the cherries , tear up the waffles, add the rosemary and some softened onion, and the duck, put it all in a small oven dish then add the duck juices to bind it all with a dash of hot water. Season to taste, then in the oven giving it a good stir and turn every five mins so you get lovely crispy bits as well as soft stuffing
A squeeze of orange in as well wouldn't go amiss, or a bit of grated orange zest0 -
