What can I do with Beetroot?

I've been given a big bunch of the stuff. I've only ever liquidised it along with apple and carrot to make a nice juice but I've got too much of it to do this with all of it. How do I cook it and has anyone got any recipes please. I've had a look on the recipe thread but nothing jumped out at me. Thanks in advance
