Moving House & Job

Hi!
My wife and I are moving from the Midlands down to Devon. I already have a job down there and have started. My wife currently works in the Midlands and our house is sold STC.
Once we have purchased a house down south, the plan is for her to stay at her parents here for a bit until she finds a job down there and then she can move.
The question is, will the banks allow her current income to be taken into account on the mortgage application? I can't help but feel that a lot of people must move a few hundred miles and there must be someone out there who has done this before!

There might be a lender for this but ultimately it would be down to the underwriter looking at the case.
