Mortgage Rate after Exchange

Quick question for any mortgage advisors on here...
Once i've exchanged contracts, can the rate in my mortgage offer be changed by the lender? If they changed the rate of the product would I automatically switch to that rate or do they have to honour the rate in the offer?
Thanks.
