    Wish I could get some Savoy cabbage! Just a wee tip if you have any extra left over....don't bother to blanche. Just dice up or shred and freeze. I usually put straight into a heavy duty freezer bag and lay flat until frozen, but equally good on a tray and then bagged. Keeps it all from clumping together, and you can use straight from the freezer, no need to defrost.
  • One of my favourite childhood dishes was savoy with potatos and mince baked in a white sauce. I lately made a vegetarian version of it and absolutely loved it.

    For four servings
    3 lb of savoy, stark removed, cut in small slices
    2 lbs of potatos, diced
    1 big onion, chopped
    1 medium leek, slices
    1 pint vegetable stock
    1 pint milk
    2 teaspoon flour
    1/2 teaspoon naton (to lessen the side effect of cabbage...)
    grated cheese
    salt and pepper

    Boil the potatos.
    Fry the onion in a little oil, add leek and savor and fry for a few minutes. Cover with stock and let it simmer for about ten minutes.
    Mix milk with flour, spices and natron, add to the savoy and bring to a boil.
    Put savoy and potatos in an oven bowl, mix well and sprinkle cheese on top. Bake until browned.

    For the lazy version you can also just stirr the cheese in and skip the baking part.
