Quickly defrosting food?

I currently have some FarmFoods chicken here though that is only 80% chicken, and rest salt/water and that says shove in oven but id prefer to fry it so make in a curry or something.
Its more I don't like the risk of having something that seems hot on outside and raw on inside (even if its colour has changed)0 -

I often defrost meat partially either on the work top or in the microwave depending on how late I am getting it out of the freezer and then chop part way through the defrosting process as smaller pieces defrost more quickly.0
